Easy red, white, and blue poke cake that’s the perfect 4th of July dessert.
I’m always looking for 4th of July recipes when the holiday creeps up. I swear it’s like I can never have enough 4th of July food ideas! One thing for sure, I always make at least three different 4th of July desserts for the holiday, and one of my family’s favorites would have to be my famous 4th of July cake, or as the dear hubby calls it my Patriotic Cake.
No one ever believes me when I tell them that this red, white, and blue cake is extremely easy to make, but it truly is! Try it for yourself!

4th of July Cake

- 18.25 oz white cake mix, prepared to package instructions
- 1 package (3-ounce package strawberry gelatin, divided when prepared with 1 cup boiling water)
- 1 package (3-ounce package berry blue gelatin, divided when prepared with 1 cup boiling water)
- 2 cups boiling water (for gelatin)
- 8 oz cream cheese
- ½ cup powdered sugar (divided)
- 8 ounces whipped topping (thawed)
- Red (white and blue sprinkles)
Instructions
- Bake cake in 13×9 pan according to package instructions. Allow to cool.
- Using a fork, poke holes in the top of the cake.
- Mix together the blue and red gelatin each with 1 cup of boiling water until dissolved, and then spoon half of each color gelatin over the cake (reserve the other half), making sure to pour over the holes. The best way to do this is a row of blue, then a row of red, and alternate so you get a colorful mix of red and blue in the cake.
- Next, in two separate bowls, mix together 8 ounces cream cheese, ¼ cup powdered sugar, and the remaining gelatin. Red in one bowl and blue in the other. To adjust the color, feel free to add red or blue food coloring to reach the shade you desire. Gel food colorings work best.
- Spread out red cream cheese mixture over the cake, followed by the blue cream cheese mixture.
- Top with whipped topping and red, white, and blue sprinkles.
- Chill for 4 hours before serving.
Cooking time for cake may vary. Check the cake mix box and bake according to instructions.
