Buttermilk Blueberry & Lemon Loaf

Homemade buttermilk blueberry & lemon loaf!

A Simple and Delicious Buttermilk Blueberry and Lemon Loaf Recipe!

 

We’ve tried a lot of different lemon blueberry loaves, but this one certainly takes the cake. I guess it’s something about the buttermilk that takes it to another level!

For best results use fresh lemons and blueberries!

Buttermilk Blueberry & Lemon Loaf

 

This Buttermilk Blueberry & Lemon Loaf is dense and delicious! Use fresh fruit for the perfect loaf.

 

  • 1 and ½ cups of all purpose flour
  • 1 tsp. Salt
  • 1 tsp. Baking powder
  • 1/3 cup of butter
  • 1 cup of sugar
  • 2 eggs
  • ½ tsp. Of vanilla
  • 2 Tablespoons of freshly grated lemon zest
  • 2 Tablespoons of fresh lemon juice
  • ½ cup of buttermilk
  • 1 cup of fresh blueberries
  • 1 Tablespoon of flour
  • Lemon Glaze
  • 2 Tablespoons of butter
  • 2 Tablespoons of fresh lemon juice
  • ½ tsp of vanilla
  • ½ cup of powdered sugar
  1. Preheat oven to 350 degrees. Spray a 9×5 loaf pan with PAM.
  2. Whisk flour, salt, and baking powder together. Set aside.
  3. In a large bowl, blend melted butter, sugar, eggs, vanilla, lemon juice and lemon zest. Mixed until well combined. Slowly add a little of the flour mixture then a little of the buttermilk. Alternate until mixed well. Stop mixing as soon as it’s all combined.
  4. Rinse fresh blueberries and drain. Add 1 tablespoon of flour to the berries and toss them around. The flour coating will help keep them from sinking to the bottom of your loaf pan.
  5. Add berries to the mixture and gently fold them. Pour mixture into loaf pan and bake – mins or until a toothpick that’s been inserted into the middle comes out clean. Set aside and let cool in pan for thirty mins. Then set on a cooling rack.
  6. GLAZE:
  7. Whisk together all ingredients and drizzle over your loaf. Allow it to settle for a few mins before serving.
