Strawberry Lemonade Bars

Easy homemade strawberry lemonade bars made completely from scratch!

Hello there! We have the most amazing homemade strawberry lemonade bars for you to try! These strawberry lemonade bars are the perfect combination of sweet, and tart. They’re perfect to serve as desserts at cookouts, and holidays.

The secret to these homemade strawberry lemonade bars is the fresh ingredients. Using fresh lemons for this recipe is crucial, so don’t skip out! Definitely use the fresh lemon juice, and zest listed in the recipe. The taste can not be replace with artificial lemon flavor.

For garnishing I use fresh lemon slices, and mint. This is optional, but if you have those ingredients on hand give it a try. You can also garnish with fresh strawberries.

Strawberry Lemonade Bars

Ingredients

Crust:

1/2 cup unsalted butter, room temp

1/4 cup granulated sugar

1 3/4 cups all-purpose flour

1/4 tsp kosher salt

 

Strawberry – lemon filling:

1 cup fresh lemon juice ( 3-4 large lemons )

1 tbsp. lemon zest

1 cup chopped strawberries, stems and hull removed

1 1/4 cups granulated sugar

4 large eggs, room temp.

1/4 cup all-purpose flour

1/2 tsp. baking powder

1/4 tsp. salt

1 cup powdered sugar

Strawberries and lemons for garnish

 

Instructions

Preheat the oven to 350. degrees. 

Line a 9 x 13 pan with parchment paper.

Spray the pan with non-stick baking spray.

Add the butter and sugar in a large bowl.

Use a hand mixer and beat until combined.

Add the flour and salt to the butter mix and mix with your hands until a crumbly dough.

Place the dough into your pan and press until there is an even layer.

Place in the oven and bake for 17 minutes.

In a stand mixer add the lemon juice, lemon zest, strawberries, and sugar.

Mix until the ingredients are well combined and it is smooth.

Now add the eggs one at a time on low speed until all eggs are combined.

Slowly add the flour, baking powder, and salt.

Continue to blend until it is combined.

Once the bake time is up remove the crust from the oven.

Now slowly pour the mixture onto the crust.

Once filled, place it in the oven.

Bake for 22-25 minutes.

Remove from the oven and let cool.

Once the bars are cool, and sprinkle them with powdered sugar.

Garnish with lemons and mint.
