Mom's Banana Cake

Ingredients

  • 4 large Bananas mashed
  • 3 Eggs
  • 2 cups of Sugar
  • 1 and 1/2 teaspoons of Vanilla
  • 2 cups of Flour
  • 1 teaspoon of Baking Soda
  • 1/4 of a teaspoon of Salt
  • 1/4 a teaspoon of Cinnamon
  • Generous amount of Nut Meg
  • 1 and 1/2 cups of Buttermilk
  • 1 1/2 sticks of Unsalted Butter softened
  • 3 teaspoons of Lemon Juice
  • 1/2 of a cup of Brown Sugar
  • 4 tablespoons of Vegetable Oil
  • Frosting:
  • 1 package of Cream Cheese softened
  • 1 stick of Unsalted Butter softened
  • 1/2 of a cup of Caramel
  • 4 cups of Powdered Sugar
  • 1 teaspoon of Vanilla

Instructions

  1. Preheat the oven to 350°.
  2. Grease a square banking pan. I used glass.
  3. In a large mixing bowl, add bananas, eggs, sugar, and vanilla. Mix until smooth.
  4. Add in remaining cake ingredients.
  5. Blend on high until smooth.
  6. Pour batter into greased pan. This is a lot of batter, if you have a smaller pan, you may want to divide into two pans.
  7. Bake for 30 to 40 minutes, or until toothpick comes out clean.
  8. If center is not done after 30 minutes, reduce heat to 300, move to top rack, and bake in 10 minute intervals until finished.
  9. Let cool completely.
  10. 10. Place all frosting ingredients into a large mixing bowl.
  11. 11. Blend on high until smooth.
  12. 12. Frost cake.
  13. 13. Refrigerate, wrapped in plastic, over night.
  14. 14. Serve and enjoy!
